Mosaic® is a dual-purpose hop grown in the USA, with alpha acid between 10.5 and 14% and beta acid between 3 and 4.5%. Derived from Simcoe®, Mosaic® was developed and marketed by Hop Breeding Company under the name HBC 369 in 2012.

 

This American hop has a seductive balance of floral, tropical, fruity and earthy flavors. Its high alpha acid content makes Mosaic® an excellent dual-purpose hop, but its strength lies in its distinctive sweetness and aroma, which are particularly well suited to pale ales and IPAs.

 

Its bitterness is complex and pronounced. Aromas include citrus oil, balsamic pine, blueberry, peach and tropical fruit. Mango is prominent, as are lime and tangerine, flowers, blueberry, bubble gum, papaya, rose and mandarin.

 

Mosaic® presents a unique and complex blend of floral, tropical, fruity and earthy notes of blueberry and tropical aromas, as well as citrus, grass, pine, spice, mandarin, papaya, rose, earth, flowers and bubble gum. The fruity aromas of pineapple, mango and passion fruit mixed with fresh lime and tangerine are complemented by blackcurrant and onion, giving Mosaic® a truly special note and making it a unique hop.

 

It's an excellent choice for American IPAs, American Pale Ales, Double IPAs, Saisons, Wheats, Brettanomyces-fermented beers, Pale Ales and Stouts.
